This week’s Cooking in the Truck comes to us via Ray Figueroa and his spin on Chicken Alfredo. We find smoked chicken out on the road at truck stops and grocery stores, so Ray chopped some up and tried this recipe off the hip.
Smoked Chicken Alfredo
- One smoked chicken half, chopped
- 1 cup Alfredo sauce
- One package of alfredo noodles boiled al dente

He chops up some smoked chicken and gives it a few flips in the pan on a hot plate. He adds in some alfredo sauce and heats the mixture for a few minutes before topping it with some freshly cooked noodles.
Meals like this are quick, easy, and makes for a good hot meal after a long drive. Not need for a mile-long shopping list, just a few things off the shelf and some a few minutes to put it together.
