Salmon is an excellent meal for drivers, as it is rich in protein, vitamins, minerals, and Omega-3 fatty acids. As part of a balanced diet, it can help lower inflammation in joints and blood pressure.
Trucker Alex Nino brings us a quick pan-seared salmon and rice dish that you can make yourself in under 10 minutes. A filling meal that can be made faster than the loaders can work the trailer is precisely what we like to show off.
Pan-seared Seasoned Salmon and Rice by Alex Nino
Utensils:
Microwave
Hotplate and pan or Self-heating skillet
Ingredients:
One serving of salmon
¼ stick of butter
Old Bay seasoning
Tony Chachere’s creole seasoning
Smoked paprika
One package of Ben’s Original Ready Rice
Lemon Juice of 1 lemon
Begin by cooking the pack of rice in the microwave according to directions (usually 90 seconds, adjust for wattage and altitude).
Lightly dust the salmon with the seasonings to taste and moisten with lemon juice.
Heat up the pan and add the butter. Once melted, pan-sear the salmon until the meat is properly cooked through. Wild salmon should be cooked to 120 degrees while farm-raised should cook to 125 degrees. The meat will turn from pink to grey when done.
Plate the salmon and rice. You can top the rice with the butter from the pan if you prefer.
