So what to do when you are stuck at a customer and have to endure a few hours of not getting miles into your paycheck? You do like Allen Dawson did and whip up a plateful of General Zso’s chicken with rice and eggrolls in his “Cafe 281” kitchen!
There are no step-by-step directions to this recipe because it’s all on the boxes in that itty-bitty writing I’m starting to have trouble reading without my spectacles. I’m sure you can get a few servings out of the box, so don’t eat it all in one sitting, unless you’re the type of trucker doing a lot of strapwork and need the energy.
The 281 Cafe’s General Tso’s Chicken with Rice and Eggrolls
Ingredients:
One package of General Tso’s Chicken
One bag of Bird’s Eye Seasoned Chicken Flavored Rice
One package of Chung’s Pork Eggrolls
Directions:
Thaw sauce in hot water while you cook/microwave the chicken pieces and egg rolls according to directions. Toss chicken pieces with the sauce until coated thoroughly.
Break apart rice inside the steam bag and cook accordingly.
While this is not the most elaborate of recipes, it is a great way to simplify the effort of making a complete meal. Getting a good refrigerator and portable freezer are two tasks drivers should seek to accomplish if they are staying with a truck long term.
