Chili is a vital meal to have on cold winter days, especially if you are stuck out in the middle of a snowstorm in Wyoming, or now, southern California. It is easy enough for novice cooks to make and will help keep you going in the brutal cold.
Ingredients:
2 pounds lean ground beef
1 pound Italian sausage
1 onion, peeled and diced
One pack of taco seasoning
2 cans tomato paste
One can of pinto beans
One can Rotel tomatoes and chilis
One can of diced tomatoes
Various additional spices: Chili powder, chipotle roasted garlic, Italian seasoning, thyme seasoning, smoked paprika, ground cumin
Directions:
Start by browning the beef, sausage, and onion in the pot for a few minutes to melt the excess fat and drain it off. Return to crockpot.
Add in the rest of the wet ingredients and package of taco seasoning, and your preferred additional spices. The best part of cooking is finding what is best for your taste palette.
Slow cook on simmer temperature for three hours.
Top with cheese, green onion, chives, and sliced hot peppers. Serve with chips or crackers.
